Dressing
1 cup Golden Door yoghurt (see below)
3 cloves garlic, roasted
2 tablespoons lemon juice
½ cup wholegrain mustard
2 tablespoons apple juice concentrate
¼ teaspoon sea salt
¼ teaspoon cracked black pepper to taste
Method
Combine all ingredients in blender and process until smooth.

caesar salad croutons
2 cups wholegrain rice bread, cut into small cubes
2 cloves garlic, roasted
2 tablespoons fresh rosemary, chopped
1 tablespoon lemon juice
2 tablespoons water
sea salt and black pepper to taste
Method
Blend all ingredients, except rice bread in blender until smooth.
Coast bread with crouton dressing
Place croutons on a baking tray lined with baking paper and bake in hot oven, approximately 200°C for 15 minutes or until golden. Stir croutons frequently while baking.
caesar salad tofu
300 grams firm tofu, cut into small strips
3 tablespoons of tamari, sprinkle over tofu strips making sure to cover tofu with tamari
Method
Place tofu on baking tray lined with baking paper.
Bake in hot oven, approximately 200°C for 15 minutes or until firm.
caesar salad additional ingredients
6 boiled free range eggs, remove yolks and discard, then chop whites in small strips
1 spanish onion, thinly sliced
2 cos lettuce, roughly chopped
Method to assemble salad
Mix all ingredients except caesar dressing in a large bowl
Add dressing and mix together with other ingredients, covering all lettuce leaves.
