1/3 cup honey at room temperature
1 1/2 cups low-fat granola
4 to 6 (3-inch round and 3/4-inch thick) circles of watermelon, seedless
4 to 6 (1/2-inch thick) slices of kiwi fruit, peeled
1 cup low-fat creamy lemon yogurt
2 or 3 seedless purple grapes, sliced in half
Drizzle honey over granola and stir together. On a serving plate, make 3-inch circles of granola. Top each granola circle with a slice of watermelon and kiwi fruit, then top with yogurt (a la hollandaise sauce on eggs benedict). Garnish with a grape half (a la olive slice on eggs benedict).
